These seaweed rice rolls are similar to Japanese sushi rolls but feature uniquely Korean fillings. Ingredients for Gimbap:

  • 4 sheets of seaweed (gim)
  • 3 cups of cooked and seasoned sushi or short-grain rice
  • Sesame oil and a pinch of salt to season the rice

Filling Options:

  1. Classic Vegetable Gimbap:

    • Julienned carrots, sautéed in a bit of sesame oil
    • Spinach, blanched and seasoned
    • Pickled radish (danmuji), sliced
  2. Beef Bulgogi Gimbap:

    • Bulgogi (marinated beef), cooked until caramelized
    • Cucumber, thinly sliced
    • Burdock root, marinated and sautéed
  3. Tuna Mayo Gimbap:

    • Canned tuna, mixed with mayonnaise and a dash of black pepper

  4. Kimchi Gimbap:

    • Kimchi, chopped and sautéed until crispy
    • Fried egg, thinly sliced

Instructions:

  1. Prepare the Rice:

    • Mix the cooked rice with sesame oil and a pinch of salt. Allow it to cool slightly before using.
  2. Prepare the Fillings:

    • Depending on the type of Gimbap you are making, prepare each ingredient accordingly. For vegetables, make sure they are cut into strips and sautéed if necessary. For proteins like beef or tuna, cook them beforehand.
  3. Assemble the Gimbap:

    • Place a sheet of seaweed on a bamboo mat.
    • Spread an even layer of rice over about two-thirds of the seaweed.
    • Arrange the fillings in lines on top of the rice.
    • Roll the seaweed tightly using the bamboo mat, pressing firmly to ensure the roll is compact.
    • Brush the outside of the seaweed with a little sesame oil for shine and flavor.
  4. Cut and Serve:

    • Using a sharp knife, slice the Gimbap into bite-sized pieces.
    • Serve with soy sauce or a dipping sauce of your choice.

  • Ensure the rice is not too hot when spreading on the seaweed to avoid tearing the sheets.
